Sometimes I think summer salads get all the fun. Cold salads just don’t sound all that appetizing when it’s 30 degrees inside. Well let me tell you – this salad will change your mind. Especially if you actually make the croutons from scratch and serve it when the butternut squash is still just slightly warm. Life changing stuff here. I made the croutons the night before we served this, so everything came together during the 15 minutes or so when the onions were soaking in vinegar and the butternut squash was roasting. Pretty easy. And you don’t have to make your own croutons, I suppose. But I think you should.
